•Employing two inert gases to reveal the response mechanism of white mushroom.•The PA metabolites of white mushroom in anaerobic package were first discriminated.•The differernt biosynthesis of GABA in anaerobic treated mushroom were compared.•The huge accumulated of GABA in filled-N2 treatment is mainly driven by PAs.
