摘要
Antioxidants are substances that can delay or inhibit oxidation reactions and are widely used in various fields such as medicine, cosmetics, and food industries. Although the three major rules in the field of antioxidants, solvent-mediated, structure/dose-activity relationship, and para-phenol hydroxyl, were proposed by our research team in the early stages, the application prospects of these three rules are still unclear. Therefore, this review will focus on exploring the application prospects of these three major rules in the field of antioxidants. Firstly, the principle and goal of antioxidants are introduced, which involve the capture or neutralization of free radicals to reduce their damage to other molecules. Subsequently, the focus is placed on discussing three important rules governing the activity mechanisms of antioxidants: solvent mediation, structure/dose-activity relationship, and para-phenol hydroxyl. The solvent-mediated rule emphasizes the importance of solvent environment in antioxidant activity. The rule of structure/dose-activity relationship focuses on the relationship between the structure and concentration of antioxidants and their activity. The rule of para-phenol hydroxyl groups emphasizes the importance of the presence of para-phenol hydroxyl groups in antioxidants. A deep understanding and application of these three rules provide us with valuable insights into the mechanisms and optimization of antioxidants. The knowledge obtained from these rules can guide the discovery and development of new antioxidants, improving their performance and efficacy. Further research will advance our understanding of antioxidants and their potential applications in fields such as medicine, food, and cosmetics.
