Most food products, including milk and dairy products, contain certain potentially dangerous substances, such as aflatoxin M1 (AFM1) and metals. Due to concerns about the toxicity of these contaminants, it is very important to control their presence and quantity in food. In view of above mentioned, the aim of this work was to apply biofixators (lactic acid bacteria (LAB) and β-glucan) and to develop the detoxification processes of AFM1 and metals from milk. The results of this research have shown that different strains of LAB depending on the parameters (viable, heat-treated or lyophilized cells and the duration of the experiment) show different binding efficiency of AFM1 and individual metals and represent an alternative to existing detoxification methods. Furthermore, it has been shown that β-glucan isolated from yeast (0,01% and 0,005%) has the ability to bind AFM1 and individual metals, and thus the ability to remove these contaminants from milk. The proposed procedures (filtration and centrifugation) for removing the biofixator-toxicant complex have been shown to be effective under laboratory conditions.
