Modeling and optimization of non-isothermal convective drying process of Lavandula × allardii

•Drying duration, energy consumption and essential oil yield of lavender were examined.•Convective drying profiles with a linear temperature increase were applied.•Higher rates of temperature increase and lower airflow velocities were more desirable.•Optimal operating conditions of non-isothermal drying of lavender were obtained.
