•Coating stearic acid on Cu/CeO2 improves its hydrophobicity with unchanged structure.•Stearic acid molecules are stably adsorbed with catalysts by bridging bidentate mode.•Water inhibition is greatly weakened by hydrophobic surface to improve acetone yield.
