Abstract
D-塔格糖,是D-半乳糖的同分异构体、D-山梨醇的C-3位差向异构体和D-果糖的C-4位差向异构体,是一种天然存在的低热量功能性甜味剂,甜度是蔗糖的92%,热量是蔗糖的1/3,为1.5 kcal/g.D-塔格糖能够预防龋齿和肥胖、降低血糖,并对肠道健康有益.该文简述了 D-塔格糖的生理功能及应用,介绍了当前生物合成D-塔格糖所需主要的生物酶L-阿拉伯糖异构酶,综述了近几年D-塔格糖生物合成研究进展,并对未来D-塔格糖的生物合成研究作出展望.
