Fermenting food materials with probiotics can generate important postbiotics of therapeutic importance. This could be a cheap and easy strategy for producing safe postbiotics as the starting materials are food grade. Here, we describe the strategy that has been used over the years to produce angiotensin 1-converting enzyme (ACE) inhibitory postbiotics from soybeans.
