Abstract
Yeasts are remarkable expression hosts to produce many industrially and medically relevant recombinant proteins. Over several decades, various protocols were developed to improve the production of recombinant protein at both genetic and fermentation levels. Selection of the yeast strain for recombinant protein expression depends on various components, including the choice of the recombinant protein itself, capacity of methanol consumption, vector, expression conditions, and secretion method. In this chapter, we will briefly discuss the yeast strains used traditionally for heterologous protein synthesis, different types of fungal enzymes, and their potential industrial applications. This chapter focuses on various biotechnological approaches such as metabolic engineering, directed evolution, genetic engineering, and high-throughput screening for enhanced secretion of fungal enzymes in yeast strains emphasizing current advancements.
