Vit C is the most vital hydrophilic, crystallized, compound. It plays an important role in the biosynthesis of collagen and tryptophan and also acts as an antiscurvy agent. Mostly plants are the major sources of vit C that are very essentials for the preventive and ameliorative role against many diseases such as oxidative stress, cancer, cardiovascular disease, inflammation, Alzheimer, Parkinson, immunity-related diseases in living organisms. Numerous medicinal advantages have been attributed to ascorbic acid, Henceforth. The daily allowance of the vit C ranges from 100–120 mg/day for human beings which is important to support the health system and growth. Intake of high doses of vit C exerts negative impact on the cells, which leads to kidney stone, peroxidant effect, and malignant growth in humans. Scientists are developing interests in the physiological role of vit C. ln this chapter, L-ascorbic acid is explored in detail, including its chemical, structural properties and biological action, such as free radical scavenging activity, anticancer, antioxidant action against many disorders.
