南极磷虾不同部位的脂质特性

Abstract
研究了南极磷虾不同部位(全虾、虾肉和虾壳)的脂质含量、脂质组成、脂肪酸组成、磷脂分子种组成.结果显示,南极磷虾脂质的磷脂含量较高,占总脂质质量分数39%~47%,同时含有丰富的ome-ga-3 长链多不饱和脂肪酸(n-3 LC-PUFA),占总脂肪酸16.52%~20.18%.二十碳五烯酸(EPA)和二十二碳六烯酸(DHA)含量极其丰富,EPA占总脂肪酸11.34%~13.62%,DHA占总脂肪酸3.58%~6.42%.采用质谱法对南极磷虾不同部位的磷脂酰胆碱(GPCho)和磷脂酰乙醇胺(GPEtn)进行了定性和定量分析,结果表明,南极磷虾脂质GPCho和GPEtn分子种结构分别有55种和32种,均主要含有n-3 LC-PUFA,其中EPA和DHA含量尤为丰富.根据含有EPA和DHA的分子种类的数量和含量,南极磷虾壳是提取GPCho的最佳原料,南极磷虾全虾是提取GPEtn的最佳原料.
