酱香型白酒酒醅中近红外快速检测乳酸的模型构建

Abstract
为实现酱香型白酒酒醅中乳酸的快速检测,通过采集酱香型白酒酒醅中乳酸的近红外光谱信息,经数学求导、散射、平滑等光谱预处理方式,构建了酱香型白酒酒醅中乳酸近红外快速检测模型.结果表明,模型预测标准差(SEP)为0.054,线性回归斜率为0.986,相关系数(RSQ)为0.977.对不同样品的十次平行测定,相对标准偏差(RSD)在2.89％以内.说明预测模型稳定,准确度高,重复性较好.将该模型用于酱香型白酒酒醅中乳酸含量的检测,可在2 min内得出数据,检测效率得到显著提升.
