Abstract
通过气相色谱-质谱联用法(GC-MS)测定6个不同品种全麦粉脂质的组成及含量.结果表明:在全麦粉脂质中鉴定出16种化合物,为5种烷基间苯二酚(AR)同系物、4种单酰基甘油酯(MG)同系物、3种甾醇、1种甲基烷基间苯二酚(MAR)和3种烷烃共5大类.不同小麦品种脂质的各组分含量不同,藁优9409和瑞华麦521中的AR同系物总量均较高,分别达到了(343.3± 7.3)μg/g和(279.5±5.7)μg/g,可以作为优质全麦粉资源应用于生产和消费中.
