Abstract
晚期糖基化终末产物(advanced glycation end products,AGEs)是由还原糖和蛋白质、脂类或核酸之间通过非酶促反应产生的一系列稳定化合物.研究表明,AGEs在体内过量积累易引发糖尿病、动脉粥样硬化、阿尔茨海默病及心血管疾病等各种慢性病.寻找合适的方法抑制AGEs的形成对保障人体健康具有重要意义,本文主要综述了AGEs的种类、结构、形成过程、致病机理及其体内代谢途径,并重点介绍了AGEs的抑制方式和机理,以期为控制AGEs的形成提供理论依据.
