摘要
•Soymilk is a plant based milk substitute with multiple health benefits.•Vitamin A and D2 previously encapsulated in emulsified form have been fortified in soymilk by sustained emulsification.•The optimized fortification procedure ensured stability of the final product, chemical compatibility between the vitamin fortificants and soymilk.•The vitamin fortificants showed good bioaccessibility in the fortifying vehicle.•The vitamin fortified soymilk was nutritionally enriched and organoleptically acceptable.
