安溪铁观音以其独特的"观音韵"闻名遐迩,闻香"如兰似桂".本文在概述兰花香气成分、桂花香气成分和木兰科植物玉兰、白兰等的香气成分的基础上,将铁观音的独特香气品质与这些花香成分进行对比分析.总结花香形成与释放的影响因素,针对铁观音香气研究现状,通过借鉴花卉香气成分的组成、花香形成与释放机理,为铁观音独特香气形成机理的揭示提供一种新思路.
