Real-Time Tracking of Digestive Behavior of Different Structured Triglycerides Based on Ordered Porous Layer Interferometry

Abstract
Triglycerides (TGs) play an important role in various biochemical reactions and in maintaining structural homeostasis. Therefore, it is important to study the digestive behavior of TGs in organisms. We loaded different TGs within the silica colloidal crystal films. Combined with ordered porous layer interferometry (OPLI), TGs were digested by pig pancreatic lipase, and mass changes inside the SCC films were tracked in real time. The corresponding digestion curves were plotted, and the reasons for the differences in digestive behavior influenced by their alkyl chain structures were analyzed. It was found that optical thickness (OT) curves of TGs with short and long chains did not change significantly. Medium-chain TGs generally have significantly changed OT curves and have good repeatability and discrimination. This method has the advantages of real time, sensitivity, and ease of operation. It is expected to be further applied in the field of food and drug quality detection and content identification.
