Gut microbiota of the small intestine as an antimicrobial barrier against foodborne pathogens: Impact of diet on the survival of S. Typhimurium and L. monocytogenes during in vitro digestion

•Diet influenced the gut microbiota colonization resistance mechanisms.•The healthy diet caused a greater inactivation of L. monocytogenes.•The healthy diet inferred the induction of stress tolerance for S. Typhimurium.•Competitive responses were the main mechanism of colonization resistance.•E. coli and B. thetaiotaomicron were the most prevalent gut microbiota species.
