芒果皮多酚提取工艺的优化及抗氧化能力分析

Abstract
以芒果皮为试验材料,采用乙醇浸提法提取芒果皮中的多酚类物质,通过单因素试验和正交试验优化芒果皮多酚的提取工艺,并分析了提取物的抗氧化能力.试验结果表明:芒果皮多酚的最佳提取工艺为乙醇浓度50%、提取时间30 min、料液比1∶10、提取温度40℃,在此条件下芒果皮多酚的提取率为0.752%;应用该最佳工艺从台农、贵妃、金煌芒等3个品种的芒果皮中提取多酚,所提取的多酚对羟自由基和DPPH自由基均具有较强的清除作用.
