Abstract
本文以信阳红油热干面红油配方为研究对象,通过单因素试验和正交试验对热干面红油配方进行优化,确定了热干面红油配方的最佳工艺配方.结果表明,信阳红油热干面的最优配方为菜籽油500 g,胡萝卜30 g,洋葱50 g,干辣椒50 g(辣椒面),猪油50 g,大蒜10 g,大葱20 g,姜20 g,香菜梗40 g,小茴香5 g,丁香1个,香叶2片,香菇1个以及八角1个,该工艺条件下得到的热干面红油颜色红亮,口感香辣,香味浓郁.
