Abstract
目的 比较鳄鱼血粉与猪血粉成分的差异.方法 本实验按国标的方法,对冻干法加工的鳄鱼血粉、猪血粉进行胆固醇、钙和磷含量的比较分析.结果 鳄鱼血冻干粉中胆固醇、钙、磷含量依次为372.729±11.174、33.542±1.657、17.988±0.169,猪血冻干粉中的胆固醇、钙、磷含量依次为437.368±10.366、20.525±1.504、23.639±0.636.结论 鳄鱼血冻干粉是较理想的胆固醇含量低,钙磷比合理的保健食品.
