Nutritional attributes of goat milk obtained from Anglo Nubian, Moxoto, and Saanen breeds in different lactation phases

The chemical composition, protein, and fatty acids profiles in goat milk from Anglo Nubian, Moxoto, and Saanen breeds in different lactation phases were evaluated. Twenty-three goats, after parturition, were randomly selected to be evaluated in 10 periods of 21 days each. Milk production was greatest for Saanen, lower for Anglo Nubian and lowest for Moxoto; milk solids were the inverse. Moxoto goats produced the highest casein content (3.99%, w/v, of milk). Saanen milk had the greatest content of omega-3 and omega-6 fatty acids. The C4:0 and C6:0 fatty acids did not vary between breeds, but C8:0 was greatest for Anglo Nubian, and followed by Saanen and Moxoto. Milk yield was higher for the Saanen breed; however, Anglo Nubian and Moxoto goats may be functionally more suitable for the manufacture of dairy products due to their higher milk protein content, without decrease in solids during lactation. & COPY; 2023 Elsevier Ltd.
