贵州省生态环境及气候条件得天独厚,食用菌种质和菌材资源丰富,十三五以来食用菌成为贵州现代农业的主导产业之一.我国国内,猪肚菇以鲜食为主,菇柄的遗弃不仅造成资源的浪费和环境的破坏,本文通过对贵州省猪肚菇的加工现状、开发猪肚菇柄脆片的意义、国内外同类食用菌研究现状分析及猪肚菇柄脆片开发应用前景进行综述.对猪肚菇柄休闲食品的开发具有深远的意义.
