Abstract
•Metal Chelating peptides from rapeseed protein hydrolysates were produced and structurally characterized.•These peptides showed a significant metal binding capacity using in vitro assay.•In bulk oils, they were not very efficient in protecting unsaturated lipids from oxidation induced by pro-oxidant metals.•Metal-chelating peptides were particularly efficient in oil-in-water emulsions.
