Abstract
研究了硅藻土、大孔树脂、聚乙烯吡咯烷酮对蓝莓果酒理化指标花色苷、酚类、总糖、总酸、色泽的影响,结果发现三种澄清剂均会不同程度影响蓝莓果酒的理化指标,其中大孔树脂除对总糖含量影响相对较小外,对其他指标影响最为明显;聚乙烯吡咯烷酮对总酸和色泽的影响最小,而硅藻土对总酚和花色苷含量影响最小.
