Abstract
In this article, we discuss meat market specifications both from a regulatory and marketing perspective. We discuss the challenges associated with creating and maintaining internationally recognized meat market specifications and requirements. We outline the key reasons for developing market specifications, elaborate on the main production- and processing-related attributes that may be specified, and outline some methods for assessing adherence to specifications. We conclude by identifying some possible future developments in meat marketing and specifications.
