摘要
•Lactiplantibacillus plantarum was used to ferment GLP.•The structure of GLP was maintained unchanged after fermentation.•Lactiplantibacillus plantarum fermentation can significantly improve the antioxidant activity of GLP.•The polysaccharide after fermentation has stronger regulation ability to the Nef2-ARE pathway in cells.
