鸡皮胶原蛋白多肽锌螯合物结构表征及生物利用率评价

Abstract
文章制备鸡皮胶原蛋白多肽锌螯合物(chicken collagen peptide-zinc,CCP-Zn),通过紫外光谱、红外光谱研究CCP-Zn理化性质,并利用果蝇模型评价CCP-Zn的体内补锌效果.结果表明锌离子通过与多肽酰胺Ⅰ带上的羧基进行配位,肽锌结合能力达到152.8 mg/g.膳食添加ZnSO4、CCP-Zn,结果显示与ZnSO4添加组相比,CCP-Zn添加能显著提高果蝇体内锌水平,说明该研究开发的CCP-Zn可以提高锌的吸收利用率,具有良好的补锌效果.
