摘要

•Low-cost portable NIR spectrometer was used for the first time to monitor S-ovalbumin content in eggs.•The correlation between S-ovalbumin content and freshness of eggs was explained from the perspective of spectroscopy.•Optimal prediction model was obtained based on WTD-MSC-IRIV-PLSR.
