•L. monocytogenes growth in ham during isothermal and dynamic storage was studied.•Storing ham at 4 instead of 5°C extends its durability by 40%•Temperature fluctuation reduces significantly the minimal durability of RTE ham.•Risk-based interventions against L. monocytogenes are suggested.
