Abstract
开展日晒萎凋、 日晒发酵、 日晒干燥等九曲红梅茶传统加工工艺与现代机械加工工艺比较试验,茶样经感官审评结果表明:日晒萎凋的香气较高、带甜;日晒发酵和日晒干燥的香气微青,滋味微闷、微青.传统工艺香气高鲜香显、微青,无日晒味,滋味醇鲜爽、花果香;现代工艺香气高甜,有果香,滋味醇厚,果香带甜.品质得分为现代工艺略高于传统工艺,但无显著差异.生化成分检测结果也表明,现代工艺的茶多酚、氨基酸、茶黄素、茶红素等红茶有益成分含量也略高于传统工艺.
