虾在活体贮运过程中会受到温度、溶氧量、高度拥挤、振动等环境因素的影响,产生应激反应,对虾的机体功能及肌肉品质产生不利影响.本文主要介绍了运输应激的诱发因素以及环境胁迫引起的氧化应激、内质网应激和能量代谢、免疫系统及肌肉品质的变化,并列举了有关虾类活体贮运的对策与建议,以期为虾类的运输管理提供理论参考.
