•Manipulating severe shoot topping delayed the average harvest date to 8 days.•Wine’s myricetin-based flavonols were significantly increased by severe shoot topping.•Severe shoot topping was more effective in a warm and dry vintage.•The carry-over effect of applying SST could be reflected in wine color.
