•Algae oil emulsions coated with soybean 7S/11S-rutin conjugates were prepared.•Interfacial coatings of soybean 7S/11S-rutin conjugates stabilized the emulsions.•Rutin addition improved resistances of the emulsions to protein-lipid co-oxidation.•Physical barrier and antioxidant property of conjugates stabilizedthe emulsions.
