Usage of nanocrystalline cellulose as a novel cryoprotective substance for the Nemipterus virgatus surimi during frozen storage

•NCC exhibited strong cryoprotective effects on surimi during frozen storage.•NCC could protect the structural integrity and functions of myofibrillar protein.•Surimi gel incorporated with NCC showed compact structure and improved gel strength.•NCC could be used as a natural cryoprotectant in surimi products.
