摘要
•GC–MS and LC-MS reveal the quality variations of HHP orange juice during storage.•Fifty-seven volatiles and 49 non-volatiles were identified in HHP orange juice.•During storage for 35 days at 4 °C, the dividing point was day 21 of storage.•Over 60 % of metabolites decreased after the storage of 21 days.•Eleven highly varied metabolites during storage were explored.
