•The INFOGEST standard protocol was modified to include cholesterol esterase.•Emulsion droplet size was inversely correlated to sterol ester bioaccessibility.•Cholesterol esterase (CE) significantly increased sterol ester bioaccessibility.•CE effect was significantly greater for fine and medium sized emulsions.
