Capillary electrophoresis (CE) is a separation technique, that gained popularity because of separating charged particles. Various CE techniques are used to analyze food toxins from plants. This book chapter focus is on cyanogenic glycosides, pyrrolizidine alkaloids, and glycoalkaloids analyzed by capillary gel electrophoresis (CGE), capillary electrochromatography (CEC), electrokinetic capillary chromatography (MEKC), capillary zone electrophoresis (CZE), micellar capillary isoelectric focusing (CIEF), and capillary isotachophoresis (CITP) for food quality and toxicant analysis. The analytical methods used to determine these toxins are UV, NMR, and ESI-MS.
