Abstract
为研制出一种具有云南特色的多功能保健饮料,以苦荞茶、姜汁和咖啡为原料,辅以牛奶,采用单因素试验和正交试验设计,确定原料最佳配比.结果表明,苦荞姜汁咖啡饮料的最佳配比为苦荞茶添加量35 mL、姜汁添加量5 mL、咖啡液添加量95 mL、牛奶用量63 mL.所得制品呈褐色,兼具咖啡香味与生姜辛辣味,风味最佳.
