Abstract
以气相二氧化硅(n-SiO2)为抗结剂,研究其在红枣粉、蛋白粉、食用裹粉3个不同类别固体类食品中的应用.根据实验测试分析,可确认气相二氧化硅在食品添加剂抗结剂国家标准使用范围内添加,相比实验中的其他两种类型抗结剂,气相二氧化硅性能表现优异,其添加量在0.5％～1.0％即可达到较好的抗结助流动性能.通过研究可确认气相二氧化硅的吸油值对抗结性能影响较大,吸油值大对抗结性能有明显促进作用.
