摘要

•The use of a cost-effective enzyme was efficient for synthesis of ascorbyl oleate.•The synthesized showed interesting biological and non-toxic properties.•It provided effective protection against lipid oxidation to olive oil.•And offered interesting perspectives for nutraceutical application.
