蛋黄油中脂肪酸的气相色谱分析

Abstract
采用5mL的KOH-甲醇(0.5mol·L-1)作为甲酯化试剂,在80℃下超声处理5min,对蛋黄中的脂肪酸进行前处理,之后采用气相色谱分析方法检测蛋黄油中的脂肪酸.程序升温方法为:柱初始温度100℃,保持3min,以3℃·min-1升至240℃,保持7min.结果表明,脂肪酸在2.5～300μg·mL-1范围内具有良好的线性关系,相关系数R2≥0.9990.本方法的特异性良好,各项指标可满足检测需求.
