•The first time to explore aril browning using widely targeted secondary metabolites.•PPO oxidation and hydrolysis reaction was the predominant reason of aril browning.•p-coumaric acid may affected greatly aril browning.•Only cyanidin-3-O-arabinoside among anthocyanins accumulated in browning arils.
