Gamma Irradiation on Genistein: Enhancement of Antioxidant property through Structural transformation

As an early stage of radiation transformation technology (RTT), this study briefly demonstrates radiation-induced structural transformation of genistein, one of flavonoids, and the enhanced anti-oxidative property of transformed genistein. The transformation of the structure of genistein by gamma irradiation was attempted. To prove radiation-induced transformation of genistein, HPLC, LC-MS and NMR analysis were performed. The enhanced anti-oxidative activity expected to appear as a result of changed structure was examined by measurement of DPPH radical scavenging activity. The purpose of this study is to show the possibility of using RTT to transform the structure of compound rather than using chemical method. Based on the advantages of convenience and fast results compared to chemical synthesis, radiation transformation can be a powerful method to produce various derivatives of polyphenols or compounds.
