•Nitrogen-doped porous carbon/Bi-doped CeO2 catalysts were successfully prepared.•Oxygen vacancy concentration of CeO2 surface can be enlarged by Bi-doping.•Nitrogen-doped porous carbon enhances the HMF adsorption performance of catalyst.•Oxygen vacancy and HMF adsorption ability enhance the catalytic performance.•DFT calculation and In-situ FTIR used to analysis the catalytic mechanism.
