Abstract
探讨了碱沉酸提法对广东丝苗类大米米糠提取粗蛋白过程中溶剂选择、料液比、提取时间、温度和碱液浓度几个因素对提取率的影响,结果发现较优的提取工艺条件为NaOH浓度为0.10 mol/L、料液比为1:10、提取温度为25℃及提取时间为150 min,此条件下测得籼碎米中大米蛋白提取率为74.3%.
