•A fluorescence imaging system was developed to detect pork quality.•Fluorescence images can establish PLSR models of TVB-N, TVC, and pH.•Fluorescence image PLSR models accurately predict TVB-N and TVC quality indicators.•Fluorescence image and hyperspectral data PLSR models are largely comparable.•Combining fluorescence and color imaging improves the model’s predictive ability.
