•Effect of on-tree maturation vs. cold store on avocado composition has been studied.•Highest metabolite levels were found on Hass fruits after 30 days on-tree maturation.•The prolonged permanence of the avocado on the tree modifies its metabolic profile.•For fruit storage, highest metabolite levels were found after 10 days in cold chamber.
