Cereal Arabinoxylans Gelled Particles: Advances in Design and Applications

Arabinoxylans (AX) are non-starch polysaccharides, which are part of the hemicellulose fraction in the cell wall of cereal tissues such as pericarp and endosperm. The AX physicochemical properties, such as molecular weight, xylan backbone substitution (A/X), and ferulic acid content (FA), contribute to its ability to form covalent gels. AX gelled particles can act as delivery systems. Besides, these particles can be considered health-promoting agents for biomedical, pharmaceutical, and nutritional applications. This chapter provides a review of AX gelled particles (macro, micro, and nanoparticles) 166characteristics and potential applications not only as simple carriers but as bioactive delivery systems.
