Abstract
近年来随着消费者对鸡(Gallus)肉品质的追求,育种工作者对鸡肉质性状的研究越来越多.肌苷酸(inosine monophosphate,IMP)与肌内脂肪(intramuscular fat,IMF)是影响鸡肉风味的显著呈味物质,深入研究其作用机制对改善鸡肉品质有重要意义.本文通过对IMP和IMF合成代谢途径中相关候选基因进行分析,旨在挖掘其作用机制与功能,提高选择效率,改善鸡肉品质,并为鸡的肉质性状遗传改良提供参考依据.
