Abstract
以紫山药粉为主要原料,开发研制紫山药海绵蛋糕.通过单因素试验、正交试验和质构特性分析得到最优配方:以混合粉质量100 g为基准(低筋面粉85 g+紫山药粉15 g),鸡蛋160 g、白砂糖120 g、植物油15 g、蛋糕油4 g、柠檬酸0.3 g,以此配方生产的紫山药海绵蛋糕营养丰富,内部呈紫红色,具有适宜的紫山药风味.
